Ridge gourd tomato chutney is a village style recipe which is prepared regularly as a side dish for idli and dosa. This recipe is very simple to make in very short period of time about 10 minutes. Tomatoes are always available at home so this becomes a regular side dish for idli dosa.



Ingredients:

Tomatoes -3
Ridge gourd -1/2 piece
Dry Red chilli -2
Green chilli -2
Curry leaves – few
Shallots -6
Chilli powder -1/2 tsp
Turmeric powder -1/4 tsp
Mustard -1/4 tsp
Coriander seeds -1/2 tsp
Oil -1 tbsp
Crystal salt -3/4 tsp



Method:

Please follow the stepwise procedure.

Finely chop the shallots, cut the red chillies, slit the green chillies.

Remove ridge gourd outer skin and wash it. Cut the ridge gourd in cubes. Also cut the tomato in big pieces. So that it will be easy to smash with laddle.

Heat oil in pressure pan,add mustard to splutter and put coriander seeds. Add chopped chillies, curry leaves,shallots and saute for a while.


Now add the ridge gourd and tomato together. Let it cook for about 2 minutes.Add salt,chilli powder and turmeric powder. Add 1 cup of water, Close the lid and allow for 2 whistles.


Now put off the flame and once the pressure is down transfer the content to thick round bottom vessel and smash it with a laddle.




Finally the gojju/gravy you can say looks like this. Transfer to a serving bowl.






Note:

  • It is better to use laddle to smash to get the real taste of this gojju.
  • If you are not used to the habit of using laddle, just give one pulse in blender.
  • You can also prepare this recipe without adding ridgegourd,by only adding tomatoes in the same method.
