Lemon belong to a citrus family and are richest source of Vitamin C. Making use of lemon in our regular diet boosts up the immune system and it acts as anti-bacterial/viral agents. It aids in weight loss and also acts as liver cleaner.Making variety is an usual recipe to carry in boxes for lunch and during travel too. In that lemon rice would be a best choice to carry during travel. Here I have posted a regular version of preparing lemon rice.


Left over rice -1 cup
Lemon -1
Onion -1
Channa dal -1/4 tsp
Urad dal -1/4 tsp
Mustard -1/4 tsp
Broken cashews -1 tsp
Turmeric powder -less than 1/4 tsp
Curry leaves -few
Red & green chillies -4
Ginger -1/4 inch
Ghee -1 tsp
Salt as required
Oil -2 tbsp

Method :

  1. Take a bowl of left over rice
2.  Squeeze out the lemon juice and remove the seeds. Now add turmeric powder, salt and mix well.
3.  Now mix this juice with the rice that is spread out. Cover and keep.
    4. Cut the onion to long thin slices, slit the green chillies,finely chop the ginger.
    5. Heat oil in a pan, fry mustard,channa dal,urad dal, cashews to golden brown.
    6. Now add onions,chillies,curry leave,ginger and saute till the onions are soft.
    7. To this add the lemon juice mixed rice and saute in between to get the heat spread around. Also check for the salt,if not sufficient, add little more.
    8. Now add the chopped coriander leaves and ghee.
    9. Serve either with coconut chutney or pickles.

Note :
  • Once you squeeze out the lemon juice add a tsp of salt to prevent the juice turning bitter.
  • Do not add more turmeric powder, as the lemon flavor would not be that inviting to look at. So add very little as shown the picture.
  • Usually this method of mixing lemon juice with rice is done for left over/extra white rice. You can refrigrate this lemon juice marinated rice and is to be prepared within 12 hours.
