Making curry masala powder and storing in containers are really helpful for fast cooking and also to make curry recipes with mild aroma. This curry masala powder is a healthy replacement for garam masala. we use more of spices with great aroma in garam masala powder,but here it is a blkend of roasted dal,little spices and curry leaves. Because they are rich in protein and iron, a tsp can be added while preparing kids recipes like gravies,sandwiches, vegetable fries, cutlet and many more….. very soon I will update with garam masala recipe and you can differentiate with the ingredients.





Ingredients :

Channa dal -2 tsp
Urad dal -2 tsp
Coriander seeds – 1 tsp
Pepper -2 tsp
Cinnamon – 2 inch size
Cloves – 5
Dry red chillies -2-3
Curry leaves – 1/4 cup
Fennel seeds/Saunf – 1 tsp
Star Anise -1 (optional)


Method :


 1. Heat an Indolium / Iron Kadai and add all the above ingredients except curry leaves and dry roast in medium flame.
 2. When the dals turn slight golden brown add the curry leaves and keep stirring well.
3. When the curry leaves starts swirling and become crispy, you can find a mild aroma of mixed grains and curry leaves. Now put off the flame.
 4. Allow it to cool down and transfer them to a blender.
 5. Grind all the roasted ingredients to a very fine powder.
6. Transfer the powder to an air tight container and refrigerate for future use.

Note:
  • Take care not to burn the ingredients while roasting.
  • You can also add star anise while roasting. I didnt add because then it will be similar like garam masala. I wanted less of aroma in my powder.
  • Wash and air dry the curry leaves previously before adding them.
  • I used this powder in making Potato fry, Ladys finger, cutlet and in few non-veg recipes too..:-)
