Previously shared about a small tip of extracting water from banana stem before we make a sir fry or any recipe out of the stem. I feel that the recipe remains incomplete unless i share a recipe made out of the stem after extracting the water. I usually do a stir fry with the stem and here is the recipe..

Ingredients:
 
Banana stem  – 15cm size
Channa dal – 1 tsp
Urad dal – 1/2 tsp
Mustard – 1/4 tsp
Curry leaves – few
Green & Red chillies -2 each
Shallots – 5-6
Salt – 1 tsp
Oil – 1 tbsp
Grated coconut – 3 tbsp (optional)
 
 
 
Method:
 
 1. Heat oil in Kadai, Add mustard and let it splutter. The fry channa dal, urad dal until golden brown.
 
 
 
 
 2. Add the chopped shallots, green chilli, red chilli, curry leaves and saute for a while.
 
 
 
 
3. Add the chopped banana stem and mix well.
4. Simmer the flame, add salt cover and cook until soft. Give a fine stir in between.
 
 
 
 
5. Adding grated coconut is purely optional and is added when the stem is completely cooked.
 
 
 
 
5. Transfer to a serving bowl.

Note:
  • Do not add water. The moisture formed once you close the lid is enough for the stem to get cooked.
  • I have take out a cup of cooked stem without coconut to feed my kid. That is what I clicked as main picture.
  • Combination of adding both type of chillies gives flavor to the cooked vegetable.
  • The taste also depends on the type of stem you choose. Choose a creamy white color banana stem.
