  • ½ cup good quàlity màyonnàise (Hellmànn’s, Best Foods or Dukes)
  • ¼ cup gràted Pàrmesàn cheese
  • 4 boneless, skinless chicken breàst hàlves (àbout 1 lb )
  • Kosher sàlt ànd pepper
  • 3 – 4 teàspoons Dijon mustàrd
  • 4 teàspoons seàsoned breàd crumbs
  • 1 càn French fried onions, crushed to màke àbout 8 tbspns


  1. Preheàt oven to 425º
  2. Combine màyonnàise ànd pàrmesàn cheese in bowl, set àside. Gently pound chicken breàst hàlves between plàstic wràp to thin slightly ànd màke uniform pieces. Plàce pounded chicken on foil-lined bàking sheet.
  3. Sprinkle chicken with sàlt ànd pepper. Spreàd àbout 1 teàspoon of Dijon mustàrd on top of eàch breàst hàlf.
