Drumstick Leaves vadai | Kadalai maavu vadai/bonda | Murunga Keerai vadai | Gram dal vada – Vadai / Vada is the common term for many variety of snack/savory fritters. South India is very common place for preparing vadai almost in all the occasions and also as tea time snack. Some vadai requires soaking of dals few hours before and some can be made with readily available flours at home.

Drumstick Leaves vadai

Today my post is on simple and easy vadai prepared using gram flour with a healthy mix of drumstick leaves. Drumstick leaves are the richest source of Iron, Calcium and many vital nutrients which is considered to be the perfect leafy vegetable providing essential health benefits. In Bangalore we do not get drumstick leaves in shops,but sometimes I get in market or from vendors.

So I always carry from my native and store in airtight container for about a week or two and use it based on its freshness. I store it because its not safe to consume too much of drumstick leaves at once and also bored to prepare daily. So I prefer alternate days in the form of stir fry (Poriyal), vadai, bonda, sambar, Kuzhambu……

Ingredients :

  • Gram flour / Besan flour / Kadalai maavu – 1 cup
  • Drumstick leaves – 1 bowl
  • Coriander leaves – 1 handful (optional) I did not add
  • Onion – 1
  • Red chilli powder – 1.5 tsp
  • Garam masala powder – 1 tsp
  • Coriander powder – 1 tsp
  • Cooking Soda – 2 pinches
  • Salt – 1 tsp
  • Water as required

Step-wise preparation of drumstick leaves vadai :

  1. Add the flour and all spice powders
  2. Add finely chopped onions and drumstick leaves
  3. Mix it and add water
  4. Mix gently until the batter is smooth without any lumps
  5. Take a small quantity and drop slowly in the hot oil
  6. Flip the other side to get cooked
  7. Drain out once golden brown
  8. Serve hot with perfect hot tea


  • Drop the batter and fry them in batches
  • Keep the flame low when adding balls and then increase the flame for even cooking
  • Wait for one side to get cooked and then flip the other side.
  • If you do not have drumstick leaves you can skip and replace with coriander leaves,then continue with remaining ingredients
  • Adding curry leaves, chopped  chillies depends upon your taste
  • Yo can increase the spice powders as per your taste as my vada is prepared with less spicy
