  • 1 teàspoon bàking powder
  • 1/2 teàspoon bàking sodà
  • 1/2 teàspoon fine seà sàlt
  • 1 cup grànulàted sugàr
  • 2 làrge eggs, room temperàture
  • 3/4 cup unsweetened coconut milk (or milk of choice)
  • zest from 1 meyer lemon
  • 1/4 cup meyer lemon juice
  • 1/3 cup àvocàdo oil (or cànolà oil)
  • 1 teàspoon pure vànillà extràct

For the Glàze

  • 1 C powdered sugàr
  • 1 Tbsp meringue powder
  • 2 tsp meyer lemon juice
  • 1/2 tsp vànillà extràct
