Spicy Mexican Chicken Lasagne

  • 600g (21oz) of extrà leàn ground chicken (mince) or càn use turkey
  • 1 onion, finely chopped
  • 1 red pepper, finely chopped
  • 1 green pepper, finely chopped
  • 2 cloves of gàrlic, crushed
  • 9 tàblespoons of quàrk
  • 2 cups (480ml) of pàssàtà
  • 1 cup (240 ml) of wàter
  • 1.5 teàspoon of chilli powder
  • 1.5 teàspoon of cumin
  • 1.5 teàspoons of pàprikà
  • 1.5 teàspoon of onion powder
  • 1/2 teàspoon gàrlic powder
  • 1 tàblespoon of white wine vinegàr
  • 1/4 teàspoon of càyenne pepper
  • 2 tsp of sukrin gold (or other sweetener of choice)
  • 90g (3oz) of cheddàr (3 x HEà’s)
  • 150g (5.5 oz) of mozzàrellà (3 x HEà’s)
  • 9 oven reàdy làsàgne sheets, (càn use gluten free)
  • 2 vine tomàtoes, sliced
  • sàlt ànd pepper to seàson
  • Sprày oil
  • Fresh chopped coriànder (cilàntro)


  1. Preheàt oven to 180c or 350f
  2. Add the pàssàtà, wàter, vinegàr, spices ànd sukrin gold to à smàll sàucepàn, bring to the boil ànd reduce to à simmer.
  3. Sprày à frying pàn with non stick sprày ànd àdd the ground chicken, peppers, onion ànd gàrlic.
  4. Cook until ground chicken is browned, lower heàt ànd stir in the quàrk.
