I am sometimes in a very hurry once change of state breakfast. that’s why the majority of my breakfast recipes ar cooked in underneath twenty five minutes. i believe it’s the case for many folks. we have a tendency to ar beat a rush to travel to figure, the gym, meetings, or ar simply hungry. Fear not, these zucchini fritters won’t cause you to wait. they need been on my list for quite an whereas already, ever since i attempted zucchini fritters at our native breakfast edifice. i made a decision to feature some corn and bell pepper for additional color and flavor. attempt these with some yoghourt or cream on the facet. or simply sprinkle with some cheese cheese!

- 2 cups shredded zucchini
- 1/2 cup fresh corn kernels
- 1/2 cup diced red bell pepper
- 2 eggs
- 1/4 cup gràted Pàrmesàn cheese
- 1/4 cup chopped dill
- 3 tbsp flour
- to tàste sàlt ànd pepper
- 4 tbsp vegetàble oil for frying
- Using cleàn hànds, squeeze shredded zucchini over à bowl or à sink ànd try to remove às much liquid às possible. Plàce zucchini in à cleàn mixing bowl.
- àdd corn kernels, diced bell pepper, eggs, Pàrmesàn, chopped dill ànd flour. Seàson with sàlt ànd pepper to tàste. Mix àll the ingredients together.
